When one speaks of ham, cured meats and preserves in Spain and neighbouring markets, one is talking not simply of an everyday foodstuff but an essential element in the nutrition of children, adults and the elderly. On the overseas market ham is abundantly familiar to all, but the same can not necessarily be said of our cured meats, using other parts of the pig to which, thanks to painstaking traditional processes we give an almost unlimited variety of textures and flavours, creating produce which has been highly valued for centuries.
Our preserves feature the same produce in a glass jar, preserved in magnificent Spanish olive oil and even refined oils.
The production and preparation of our ham and cured meats remains absolutely faithful to traditional recipes. And, as is well known, our climate and strategic geographical position take care of the rest. Three components all equally essential, and the reason why we have for centuries been recognised as a delicatessen for locals and visitors alike.
